18 Leftover Pulled Pork Recipes

    When you've spent ages perfecting that pulled pork recipe alongside the time it normally takes do it properly, you want to make sure that any leftovers are used in the best way possible! Once you've slow cooked that pork, you've done the hardest part, now you can stick it into a dish of your choice with a couple of extra ingredients and you're away!

    Pulled Pork Nachos

    A classic when it comes to using up leftover pulled pork, this is my go-to as it's so simple and easy and you can load them up as much or as little as you like. Also.. cheese, I absolutely love cheese.

    Ingredients:

    • 1 bag corn tortilla chips
    • 2 cups pulled pork (warmed up)
    • 1 1/2 cups shredded cheddar cheese
    • 1 jalapeño, sliced thin
    • 1/2 red onion, chopped
    • 1/2 cup BBQ sauce (see notes for our favorite)

     

    Creamy BBQ Pulled Pork Spaghetti

    Ingredients:

    • 12-13 oz spaghetti noodles, cooked al dente according to directions
    • 3-4 cups pulled pork
    • 2/3 cup your favorite BBQ sauce
    • 1 12 oz. can diced tomatoes, undrained
    • 4 oz cream cheese
    • 1/2 cup green onions, chopped
    • 1 1/2 cups shredded cheese (cheddar, cojack etc.)

    Pulled Pork Chilli

    Ingredients:

    • 2 c. leftover pulled pork
    • 1 Tbsp olive oil
    • 2 cans petite diced tomatoes 14.5 oz cans
    • 15 oz corn drained
    • 15.5 oz chili beans
    • 1 Tbsp chili powder
    • 1 tsp cumin
    • 1 tsp sweet and smokey rub
    • 1 c. beef broth
    • Additional toppings; crushed chips, shredded cheese, sour cream, avocados etc

    Pulled Pork Hash

    Ingredients

    • 1 tablespoon vegetable oil, or EVOO
    • 1 red onion, diced
    • 1 orange pepper, diced
    • 1/4 cup red pepper, diced
    • 2 cloves garlic, diced
    • 1 cup pulled pork
    • 5 large potatoes, boiled and then diced into cubes (peeling optional)
    • 2 teaspoons paprika
    • 1 teaspoon kosher salt
    • 1 teaspoon pepper
    • 1 cup cheddar cheese
    • 3 large eggs
    • scallions and jalapeno for garnish, optional

    Pulled Pork Taquitos

    Ingredients:

    • 36 corn tortillas
    • 4 cups leftover pulled pork or rotisserie chicken
    • 2 tbsp canola oil
    • 1/2 cup shredded sharp cheddar cheese
    • 1/2 cup shredded mozarella cheese

    Pulled Pork Mexican Pizza

    Pulled Pork Mexican Pizza

    Ingredients

    • 1 Cup Slow Cooker Mexican Spiced Pulled Pork
    • 1 Cup Refried Black Beans
    • ½ Tablespoon Cumin
    • ½ Tablespoon Chili Powder
    • ½ Tablespoon Garlic Powder
    • 1 Teaspoon Salt
    • 1-2 Tablespoons Hot Sauce (I use Cholula)
    • ¾ Cup Butternut Squash
    • ½ Red Onion
    • ¼ Cup Cilantro
    • ½ Jalapeno (Remove seeds to make less spicy)
    • ½ Cup Reduced Fat Colby Jack Cheese
    • ¼ Cup Monterrey Jack Cheese
    • ¼ Cup Reduced Fat Feta Cheese
    • 14 oz Homemade Whole Wheat Pizza Dough or Pre-Made Whole Wheat Pizza Crush (I use Boboli)

     

    Stuffed Avocados

    Ingredients

    • 2 ripe avocados, sliced in half lengthwise & pit and skin removed
    • 2-3 teaspoons of grass-fed butter or coconut oil
    • granulated garlic, to taste
    • sea salt, to taste
    • leftover pulled pork, for stuffing

    Pulled Pork Mac & Cheese Pizza

    For the macaroni and cheese:
    • 8 ounces macaroni
    • 4 tablespoons butter
    • 2 large eggs
    • 6 ounces evaporated milk
    • 1 teaspoon salt
    • 3/4 teaspoon ground mustard
    • 1/2 teaspoon pepper
    • 10 ounces cheddar cheese grated
    For the pizza:
    • 1 Stonefire pizza crust
    • Macaroni and cheese
    • 2 ounces cheddar cheese grated
    • 1 cup leftover pulled pork warmed
    • 1/4 cup barbecue sauce
    • 2 tablespoons chopped cilantro

    Ingredients:

    • 4 large russet potatoes
    • tablespoons oil
    • 1 teaspoon salt (or to taste)
    • 1/2 teaspoon pepper (or to taste)

    • 1.5 cups pulled pork
    • 1.5 cups shredded cheese (mozzarella or cheddar)

    • 5-6 cups pulled pork

    • 1 cup frozen corn

    • 1 1/2 cups leftover pulled pork
    • 1/4 cup goat cheese crumbles
    • 1 teaspoon dried cilantro

    • 4 oz shredded monterrey jack cheese

     

     

    Pulled Pork Loaded Fries

    Ingredients

    • 650g of potatoes, sliced in chips
    • approx 1 cup of leftover Slow Cooker Pulled Pork or Stove Top Pulled Pork, warmed up
    • 1/2 tsp of salt
    • red pepper, diced
    • green pepper, diced
    • red onion, diced
    • 3 green onions, sliced
    • 30g of cheddar
    • cooking oil spray

    Ingredients

    • 1 (8 inch) Cuban baguette or hoagie roll
    • 1 to 2 tablespoons unsalted butter, softened to room temperature
    • Leftover Beer Braised Pulled Pork (click here for my recipe)
    • 2 slices of ham. I used Virginia Baked Ham
    • 2 slices of cheese. Swiss is traditional, but I used Fontina
    • Homemade Bread and Butter Pickles (click here for my easy recipe that's ready in just 15 minutes!) or you can use your favorite store-bought pickles

    • 1 package (16 ounces) penne pasta
    • 1 cup chopped sweet red pepper
    • 3/4 cup chopped onion
    • 1 tablespoon butter

    • 3 garlic cloves, minced
    • 1 carton (16 ounces) refrigerated fully cooked barbecued shredded pork

    Shredded Pork Empanadas with Adobo Aioli Dip

    Ingredients:

    Empanada Dough

    • 3 cups all purpose flour
    • 1 tablespoon baking powder
    • 2 teaspoons sugar
    • pinch of salt
    • 1/2 cup shortening
    • 1 egg
    • 3/4 cup chicken stock

    Filling Sauce

    • 1/2 an onion quartered
    • 1 small tomato quartered
    • 1 cup chicken stock
    • 1 can diced fire roasted tomatoes
    • 3 to 4 chilies in adobo sauce
    • 3 to 4 tablespoons adobo sauce

    Filling

    • 1 tablespoon olive oil
    • 1 poblano pepper finely diced
    • 1 russet potato finely diced
    • 2 zucchini peeled and finely diced
    • 1 carrot peeled and finely diced
    • 4 small mushrooms diced
    • 1 teaspoon salt
    • 1/2 teaspoon pepper
    • 2 cups leftover shredded pulled pork
    • 1 cup of Filling Sauce
    • oil for frying

    Adobo Aioli Dip

    • 1/2 cup mayonnaise
    • juice from 1/2 a lime
    • 1.5 to 2 tablespoons Filling Sauce or to taste

     

     

    BBQ Pulled Pork Grilled Cheese

    ingredients
    • 1 tablespoon butter
    • 2 slices bread
    • 2 slices cheddar (or 1/2 cup shredded)
    • 1/2 cup pulled pork, warm
    • 1 tablespoon BBQ sauce (or to taste)
    • 2 tablespoons coleslaw (optional)
